This refreshing, nutrient-rich salad combines fresh seasonal vegetables with a zesty Glow Chai-infused dressing that enhances both flavor and wellness.
Ingredients (Serves 2–3)
- 1 bunch asparagus, trimmed and lightly blanched
- 1 head Boston lettuce, gently torn
- 1 cup snap peas, halved
- ¼ cup toasted almonds (optional, for crunch)
- ¼ cup crumbled feta (optional, for a creamy touch)
Glow Chai Dressing
- 1 scoop Glow Chai
- 2 tablespoons olive oil
- Juice of one freshly squeezed lemon
- 2 teaspoons honey
- Salt to taste
Instructions
- Prepare the dressing: In a small bowl, whisk together Glow Chai, olive oil, lemon juice, honey, and salt until well combined. Let it sit for a few minutes to allow the flavors to meld.
- Prepare the salad: Blanch the asparagus in boiling water for about 1–2 minutes, then immediately transfer to an ice bath to keep its vibrant green color and crisp texture. Slice into bite-sized pieces.
- Assemble the salad: In a large bowl, toss together the Boston lettuce, snap peas, and asparagus. If using, sprinkle with toasted almonds and crumbled feta.
- Dress & serve: Drizzle the Glow Chai dressing over the salad and toss gently. Serve immediately and enjoy the fresh, spiced flavors of spring!
