If you are looking for an easy chai spice cookie recipe that feels both comforting and a little unexpected, these Glow Chai shortbread cookies may become your new favorite.

Buttery, crisp, warmly spiced, and simple to make, they transform a classic shortbread cookie into something rich with flavor and aroma.

Recently, we started experimenting with new ways to use our CHAI.COM Glow Chai blend beyond the mug, and this recipe immediately stood out. The warm spices in the blend elevate traditional shortbread from simple to memorable with almost no extra effort.

The result is a cookie that pairs beautifully with a hot cup of Heirloom Chai or Glow Chai and makes everyday moments feel a little more special.

Why Glow Chai Works So Well in Baking

One of the reasons Glow Chai works beautifully in baking is because the blend is finely ground, concentrated, and made entirely from real organic spices.

Glow Chai includes:
• turmeric
• ginger
• cinnamon
• green cardamom
• cloves
• black pepper
• nutmeg

Together, these spices create warmth and depth without overpowering the buttery texture of shortbread.

Unlike many chai blends that contain sugar, fillers, or artificial flavoring, our blends integrate smoothly into recipes while allowing the natural flavors of the ingredients to shine through.

The best part? You do not need to measure seven separate spices to create rich chai flavor. One scoop does the work for you.

Glow Chai Shortbread Cookie Recipe

For this recipe, we used a simple shortbread cookie recipe as the base and added Glow Chai to the flour mixture.

Ingredients

  • 10 tbsp unsalted butter unsalted butter, at room temperature 142g
  • 1/2 cup confectioners' sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour 180g
  • 1/2 teaspoon kosher salt
  • 2 tablespoons CHAI.COM Glow Chai

Instructions

  1. Gather the ingredients. Preheat the oven to 300 degrees F (150 degrees C). Line a baking sheet with parchment paper.

  2. Combine butter, ½ cup sugar, salt, and vanilla extract in a large bowl using the back of a spatula or spoon, slowly incorporating ingredients until butter has softened somewhat and ingredients come together.

  3. Rub flour into butter mixture, using floured hands and fingertips, rubbing mixture together, until floury crumbs become buttery crumbs, about 1 to 2 minutes. Press mixture together until forms a dough ball.

  4. Transfer dough to a lightly floured work surface; press into a disk, then into a ½-inch-thick rectangle. Cover with a piece of plastic wrap. Flatten dough to ¼-inch-thick using a flat pan or rolling pin. Reshape into a 5x12-inch rectangle.

  5. Cut dough lengthwise into 5 even strips, about 1-inch wide, trimming excess dough if necessary. Cut each strip into 6 even squares (you can roll out scraps to form more cookies if necessary). Transfer cookies to the prepared baking sheet. Poke 4 rows of holes into each cookie using a fork.

  6. Bake in the preheated oven until golden brown, about 50 minutes. Cool cookies on the baking sheet for 10 minutes, then transfer to a wire rack to cool completely. Enjoy!

The aroma while baking is incredible. Warm spice, butter, and subtle sweetness fill the kitchen in the best possible way.
